Ingredients

Pastry

  • 200g wholemeal flour
  • 100g flour (Lamb brand)
  • 150g margarine (Stork)
  • 100g sugar (Lamb brand)
  • 1 egg (Le Naturelle)
  • 1 teaspoon Vanilla essence
  • Zest and juice of an orange
  • ½ a teaspoon cinnamon

Filling

  • 3 granny smith apples
  • 1 carrot peeled 
  • Handful dried cranberries
  • Handful chopped roasted almonds
  • ½ a teaspoon vanilla essence
  • 1 teaspoon mixed, cinnamon, nutmeg and cloves
  • 2 spoons caster sugar (Lamb brand)

Crumble

  • 100g oats
  • 100f flour (Lamb brand)
  • 160g soft brown sugar
  • 180g cold margarine
  • 1 small tub Greek yogurt
  • ½ a teaspoon vanilla essence
  • 1 spoon honey

Method

Sweet Pastry
Rub in flour and margarine together. Mix together the sugar, egg, zest and juice of the orange and the spices. Pour onto the flour mixture and knead into a soft dough. Roll out the pastry on a lightly dusted surface into your favourite pie dish.

Apple filling
Peel, core and finely slice the apples. Peel and grate the carrot, mix together with the apple, almond, cranberries, sugar, vanilla and spices. Press mixture over the sweet pastry base.

Crumble
Simply rub together the sugar, oats, margarine and flour into a coarse crumble. Spread over the apple mixture. Bake at 175°C for approx. 35 minutes.
Serve lukewarm accompanied with the sweetened yoghourt
