Chicken Quesadillas

Ingredients
- 1 small onion, chopped
- 1 red pepper, diced
- 500g chicken mince
- 1 packet chicken taco spice mix (Santa Maria)
- 100g sweet corn
- 1 tbsp chopped fresh coriander
- 100g grated Mexican cheese
- 2 large tomatoes, deseeded and diced
- 2 tbsp sliced green jalapenos (Santa Maria)
- 1 packet medium plain tortilla wraps (Santa Maria)
- Olive oil for frying
- 150ml fresh cream
- 2 limes cut into wedges

Method
Heat 1 tbsp of olive oil in a pan and fry together the onion and red pepper for 4 minutes to soften. Add in the chicken mince and spice mix and cook together for 3-4 minutes. Stir in the sweet corn, fresh coriander and half of the grated cheese and remove off the heat. Lay out your tortilla wraps and press the filling onto half. Top with diced tomatoes, sliced jalapeños and top with the remaining cheese. Heat a large pan with a little oil and cook the stuffed tortillas on both sides for 3-4 minutes. Remove from the heat, allow to cool down slightly and cut into triangles. Serve with a side of sour cream
