Mushroom, apple and blue cheese crumble

Ingredients
For the filling
- 500g mushrooms, cut in quarters
- 250g onions. diced
- 3 cloves garlic. chopped
- 100g margarine (Stork)
- 100g plain flour
- 400ml cooking cream (Hanini)
- 1 cup vegetable stock (Knorr)
- 1 tbsp. fresh thyme
- 1 red apple, diced
- 80g blue cheese (Emborg)
For the crumble
- 50g hazelnuts, crushed (Lamb brand)
- 280g oats (Lamb brand)
- 200g plain flour (Lamb brand)
- 160g margarine, cut in small cubes (Stork)
Method
In little oil sauté the mushrooms, onions and thyme until lightly browned. Add the apple and toss for 1 min, add the margarine and melt then add the flour and mix well. Pour in the stock and mix well then add the cream, blue cheese and keep stirring on low heat. Spoon the mixture to a small oven dish and spread evenly. In a bowl rub together the crumble ingredients with your fingers and place on top the mushroom mix. Bake at 190°C until the crumble is golden brown then set.
