Raspberrry and chia berry pudding

Ingredients
For the pudding
- 300g whole meal flour (Lamb brand)
- 150g sugar
- 150ml milk
- oil
- 2 eggs
- 1 tsp baking powder
- zest of a lemon
- 1 tsp vanilla extract
- 250g frozen or fresh raspberries
For the raspberry and chia marmalade
- 250g raspberries
- 50g chia seeds
- 100g sugar
- 1 lime
- 5g Pectin
- You will also need icing sugar and mint to decorate
Method
Place the sugar, lime zest and raspberries in a pan and cook a low heat to dissolve and make a marmalade. Add in the pectin, sugar and chia seeds and continue to cook for 2 minutes. Spoon this into your baking ramekins. For the pudding mix, place the eggs, oil, sugar, lemon zest and vanilla and whisk together. Add in the flour and baking powder and whisk till smooth and silky. Pour the batter into the ramekins over the marmalade and bake in the oven at 175`c for approx. 25 minutes. Cool down slightly and serve dusted with icing sugar and fresh mint.

- 2 bajdiet
- 5g trab tal-ħami
- qoxra ta’ lumija

Method
Poġġi z-zokkor, il-qoxra tal-luminċell u l-lampun ġo taġen u sajjar fuq nar baxx biex jinħall u tagħmel ġamm. Żid il-pektin, iz-zokkor u ż-żrieragħ taċ-chia u kompli sajjar għal 2 minuti. Poġġi t-taħlita fir-ramekins tal-ħami tiegħek. Għat-taħlita tal-pudina, poġġi l-bajd, iż-żejt, iz-zokkor, qoxra tal-lumija u l-vanilja u ħabbat flimkien. Żid id-dqiq u t-trab tal-ħami u ħawwad sakemm it-taħlita tkun mingħajr biċċiet. Ferra’ din it-taħlita fir-ramekins fuq il-ġamm u aħmi fil-forn f’temperatura ta’ 175°C għal madwar 25 minuta. Kessaħ ftit u servi bi ftit zokkor fin u n-nagħniegħ frisk fil-wiċċ.
