Pineapple and prawn stir-fried rice

Ingredients

  • 1 pineapple
  • 2 tbsp. oil
  • 100g thick cut bacon, diced
  • 1 onion, peeled and sliced
  • 6 cloves garlic
  • 2 red chilies
  • 1 piece fresh ginger
  • 8 medium prawns
  • 2 heaped cups cooked rice (Eurico)
  • 1 tsp curry powder
  • 1 tbsp. fish sauce
  • 1 tbsp. Asian black bean sauce
  • ½ tsp sesame oil (Tiger Tiger)
  • 1 tbsp. sugar
  • 2 spring onions, thinly sliced
  • 1 tbsp. chopped fresh coriander
  • 2 tbsp. cooked salted peanuts

Method

Cut the pineapple in halve and hollow out the pulp and dice. Remove the center stalk and discard but keep the outer skins. Heat up 2 tbsp. vegetable oil in a wok or deep pan until fuming, quick fry the bacon till crispy. Add in the onion, garlic, chopped ginger and sliced chili and continue to cook for 3-4 minutes. Toss in the prawns and cook for 1 minute more. Next add in the rice and season with the curry powder, fish sauce, black bean sauce, sesame oil and sugar and heat through quickly. Remove off the heat and stir in the diced pineapple, coriander, spring onions and peanuts. Spoon the mixture into the pineapple shells and serve immediately.

  • 6 sinniet tewm
  • 2 bżariet ħomor pikkanti
  • 200g bejken maqtugħ oħxon
  • biċċa waħda ġinġer frisk
  • 8 gambli kbar
  • 2 kikkri mimlijin ross imsajjar
  • kuċċarina trab tal-kari
  • mgħarfa zalza tal-ħut
  • mgħarfa Asian black bean sauce
  • nofs kuċċarina żejt tal-ġulġlien
  • kuċċarina zokkor
  • 2 basliet ħodor
  • kosbor frisk
  • karawett immellaħ

Method

Qatta’ l-ananas min-nofs u neħħi l-mili tagħha u qattgħu f’dadi. Neħħi z-zokk u armih, imma żomm il-ġlud ta’ barra. Saħħan 2 imgħaref żejt  f’wok jew taġen fond sakemm jagħli.  Aqli malajr il-bejken sakemm jiġi jqarmeċ. Żid il-basla, it-tewm, il-ġinġer imqatta’ u l-bżar imqatta’ u kompli sajjar għal 3-4 minuti. Itfa’ l-gambli kbar u sajjar għal minuta oħra. Imbagħad żid ir-ross u ħawwar bit-trab tal-kari, zalza tal-ħut, black bean sauce, żejt tal-ġulġlien u zokkor.  Saħħan malajr. Neħħi minn fuq in-nar u ħawwad miegħu l-ananas imqattgħa, il-kosbor, il-basal aħdar u l-karawett. Poġġi t-taħlita fil-qxur tal-ananas u servi immedjatament.
