Grilled sirloin of beef on mashed peas and garlic sautéed potatoes

Ingredients

  • 2 tbsp. garlic butter
  • 3 tbsp. chili oil
  • 1 large sweet potato, sliced
  • 1 tbsp. olive oil
  • 2 x 200g sirloin of beef steaks
  • 30g pancetta finely chopped
  • 1 onion
  • 2 gloves garlic
  • 1 tsp mixed spice
  • ¼ glass hot vegetable stock (Knorr)
  • 150g frozen peas (Emborg)
  • Good pinch black sesame seeds

Method

Heat the garlic butter and chilli oil inna large pan, add in the sliced potato and season well with salt and pepper. Cook till golden and crispy for 10-15 minutes turning around occasionally to brown evenly.

Meanwhile, heat the olive oil in a griddle pan and seal the beef on both sides for 2 minutes. Place into an oven dish and continue to cook in the oven at 120`c to your liking. Meanwhile, in the same pan brown the pancetta, then add in the chopped onion, garlic, mixed spice and sauté for 3 minutes. Add in the frozen peas and  stock, season with salt and pepper and simmer until softened then mash.

.Serve the beef on the mashed peas with the browned sweet garlic potato on the side. Driizzle with extra chilli oil and sprinkle with black sesame seeds to garnish.

Ingredients

  • 400g flett taċ-ċanga
  • 150g piżelli tal-friża
  • basla
  • kuċċarina ħwawar imħallta
  • 2 sinniet tewm
  • kwart ta’ tazza stokk tal-ħaxix
  • 30g panċetta mqattgħa
  • patata ħelwa kbira
  • 2 imgħaref butir tat-tewm
  • 3 imgħaref żejt pikkanti
  • nofs imgħarfa żerriegħa tal-ġulġlien sewda

Method

Saħħan il-butir tat-tewm u ż-żejt pikkanti ġewwa taġen kbir.  Żid il-patata mqattgħa u ħawwar sew bil-melħ u l-bżar. Sajjar għal madwar 10 sa 15-il minuta billi ddawwarha fuq kull naħa sakemm tieħu kulur dehbi u ssir tqarmeċ. Sadanittant, saħħan iż-żejt taż-żebbuġa ġo taġen gradilja u ssiġilla ċ-ċanga fuq iż-żewġ naħat għal 2 minuti. Poġġi ġo dixx tal-forn u kompli sajjar fil-forn f’temperatura ta’ 120°C. Sadanittant, fl-istess taġen sajjar il-pancetta, imbagħad żid il-basla mqattgħa, it-tewm, il-ħwawar imħallta u qalli għal 3 minuti. Żid il-piżelli tal-friża u l-istokk. Ħawwar bil-melħ u l-bżar u ħalliha ttektek sakemm tirtab imbagħad għaffeġ f’maxx. Servi l-laħam taċ-ċanga fuq il-piżelli mgħaffġa bil-patata fil-ġenb. Roxx ftit żejt pikkanti u żerriegħa tal-ġulġlien sewda fil-wiċċ biex iżżejjen.
