Vegan zucchini quinoa and sweet potato cakes with avocado dip

Ingredients
For the quinoa cakes
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, finely chopped
- 1 sweet potato, peeled and shredded
- 1 large zucchini, shredded
- 3 tbsp toasted sunflower seeds
- Salt and pepper to taste
- 2 tbsp minced sun-dried tomatoes (Camel)
- 2 tbsp chopped fresh basil and mint
- 200g cooked mixed quinoa
- 3 tbsp plain flour
For the avocado dip
- 1 rip avocado, peeled and stone removed
- 1 clove garlic
- Pinch chilli flakes
- Drizzle olive oil
- 2 tbsp chopped coriander or basil
- Squeeze lemon or lime juice
Method
Start this recipe by frying together the onion and garlic for 2 minutes to soften. Place the shredded potato and zucchini into a tea towel and squeeze out the water. Place the potato and zucchini into the pan and fry for 5 minutes till soft. Remove off the heat and stir in all the remaining ingredients. Mix well then form into patties. Place onto a greased baking sheet, drizzle lightly with oil and bake at 200`c for 10 minutes. Flip over and continue to cook on the other side for 8-10 minutes. Alternatively, you can pan fry the patties on each side for 3 minutes in a greased frying pan. Meanwhile make the dip by blitzing all the ingredients together and serve on the side in a bowl with the quinoa cakes.

Method
Ibda din ir-riċetta billi taqli flimkien il-basla u t-tewm għal 2 minuti sakemm jirtabu. Poġġi l-patata mqattgħa u z-zucchina ġo sarvetta u neħħi l-ilma. Poġġi l-patata u z-zucchina fit-taġen u aqli għal 5 minuti sakemm ikunu rotob. Neħħi minn fuq in-nar u ħawwad l-ingredjenti kollha li jifdal. Ħawwad sew, imbagħad ifforma f’pulpetti. Poġġi fuq karta tal-ħami bix-xaħam, xerred ftit żejt u aħmi fi 200°C għal 10 minuti. Dawwar u kompli sajjar fuq in-naħa l-oħra għal 8-10 minuti. Alternattivament, tista’ taqli l-pulpetti fuq kull naħa għal 3 minuti f’taġen bi ftit żejt. Sadanittant għamel id-dip billi tħawwad l-ingredjenti kollha flimkien u servi fuq il-ġenb fi skutella mal-pulpetti tal-quinoa.
