Marinated Salmon on a Herb and nut Quinoa salad

Ingredients
- 1 cook–in-bag quinoa (Tipiak)
- 2 tbsp. walnuts
- Small bunch fresh basil and parsley
- 1/4 small leek, finely chopped
- 100g tinned kidney beans
- 2 gloves garlic
- 4 tbsp. olive oil
- 250g salmon fillets
- 1 lemon
- 1 tbsp. lemon pepper
- salt and pepper
Method
Boil the quinoa in the bag in fish stock until cooked through according to the instructions on the packet. Meanwhile, grate the lemon zest and blend together with the 3 tbsp. oil, walnuts, garlic and parsley like a pesto. Mix the pesto with the beans, and finely chopped leek. Once cooked, stir in the quinoa and put aside. Next, dice the salmon and toss in lemon juice, lemon pepper , 1 tbsp. olive oil and fresh salt and pepper. Serve the quinoa salad into deep bowls with the marinated salmon on top.

Ladarba msajra, ħawwad il-quinoa u warrabha. Wara, qatta’ s-salamun u itfgħu fil-meraq tal-lumi, lemon pepper, mgħarfa żejt taż-żebbuġa u melħ u bżar frisk. Servi l-insalata tal-quinoa fi skutelli fondi bis-salamun immarinat fuq nett.
