Chicken Ceaser multigrain panini

Ceaser panini

Ingredients

For the panini

  • 400g brown flour (Lamb brand)
  • 100g plain flour (Lamb brand)
  • 1 tbsp. butter
  • 1 tbsp. salt
  • 1 tbsp. sugar
  • 12g yeast
  • 2-3 tbsp. pumpkin seeds
  • 1 tbsp. black and white sesame seeds
  • 250ml warm water (approx.)

For the filling

  • 1 roasted chicken breast
  • 150g cream cheese
  • 2 tbsp. grated Parmesan
  • 2 tbsp. mayonnaise
  • Juice and zest of 1 lemon
  • Romain lettuce leaves
  • 2 tomatoes, sliced

Method

Place the flours, butter, sugar, salt, yeast together in a large mixing bowl. Add in 1 tsp of each sesame seeds and 1 tbsp. pumpkin seeds. Mix to a soft dough with the warm water and knead well for 5-6 minutes. Cover and allow to prove for 1 hour. Return the dough onto a lightly dusted surface and cut into 60 g balls, roll and dip in a mixture of the seeds, pressing gently to stick. Transfer onto baking sheets and allow to prove again until the panini are double in size. Bake in a pre heated oven at 180`c for approx. 15 minutes until slightly browned. For the filling, dice the chicken breast and mix together with the cream cheese, parmesan, mayonnaise, lemon juice and zest and season well with salt and pepper. Split the cooked panini and stuff with the chicken filling, romaine lettuce leaves and sliced tomatoes.

  • żerriegħa tal-ġulġlien bajda
  • żerriegħa tal-ġulġlien sewda
  • 250ml ilma sħun
  • sider tat-tiġieġa mixwi
  • barmil żgħir ġobon kremuż
  • 2 imgħaref ġobon parmiġġjan maħkuk
  • 2 imgħaref mayonnaise
  • meraq u qoxra ta’ lumija
  • ħassa
  • 2 tadamiet

Method

Poġġi d-dqiq, il-butir, iz-zokkor, il-melħ u l-ħmira flimkien fi skutella kbira u ħawwad. Żid kuċċarina minn kull żerriegħa tal-ġulġlien u mgħarfa żerriegħa tal-qargħa ħamra. Ħawwad sew bl-ilma sħun sakemm issir għaġina ratba u għaġen sewwa għal 5-6 minuti. Għatti u ħalli toqgħod għal siegħa. Poġġi l-għaġina fuq wiċċ bi ftit dqiq u aqsam f’boċċi ta’ 60g. Irrombla kull waħda u għaddi  mit-taħlita taż-żrieragħ, agħfas bil-mod biex iż-żrieragħ jeħlu mal-għaġina. Poġġi fuq folji tal-ħami u ħallihom jerġgħu joqogħdu sakemm il-panini jirduppjaw fid-daqs. Sajjar ġo forn imsaħħan minn qabel, f’temperatura ta’ 180°C għal madwar 15-il minuta sakemm jieħdu kulur kannella. Għall-mili, qatta’ s-sider tat-tiġieġ u ħawwad flimkien mal-ġobon kremuż, il-parmiġġjan, il-mayonnaise, il-meraq u l-qoxra tal-lumija u ħawwar sew bil-melħ u l-bżar. Aqsam il-panini msajra u imla bil-mili tat-tiġieġ, il-weraq tal-ħass u t-tadam imfellel.
