Grilled salmon on a bean and sun-dried tomato salad

Method
Roughly chop the beans, sun-dried tomatoes, parsley, shallot and mix together well. Grate the zest of the lemon and add in along with 2 tbsp. olive oil, salt and pepper.
Meanwhile, squeeze the juice of the lemon into a bowl and blend with the avocado cubes and yogurt.
On a preheated grill, seal the salmon on both sides and continue to cook in the oven for approx. 8 minutes. Spread over the lemon and avocado yoghurt as a base onto 2 serving plates and top with the bean salad. Place the salmon fillets on top and finish with rocket to garnish.

Sadanittant, għasar il-meraq tal-lumija fi skutella u ħallat mal-biċċiet tal-avokado u l-jogurt.
Fuq gradilja msaħħna minn qabel, issiġilla s-salamun miż-żewġ naħat u kompli sajjar fil-forn għal madwar 8 minuti. F’żewġ platti ifrex it-taħlita tal-jogurt tal-lumi u l-avokado bħala bażi u fuqha l-insalata tal-fażola. Poġġi l-fletti tas-salamun fil-wiċċ u spiċċa bil-weraq tal-aruka fuqu biex iżżejjen.
