Red pesto pasta salad with cherry tomatoes, mozzarella and Parma ham

Serves: 2-3

Ingredients

  • 200g cooked pasta shapes of your choice
  • 2 tbsp mayonnaise
  • 2 heaped tbsp red pesto
  • 10 mini mozzarella balls
  • 20 cherry tomatoes, halved
  • 6 slices Parma Ham
  • 1 tbsp toasted pine nuts
  • Handful herbed croutons
  • Fresh basil leaves

Method

In a large bowl mix together the mayonnaise and red pesto. Stir in the cooked pasta and coat well. Spoon the pasta into 2 large pasta plates. Arrange the mozzarella balls and cherry tomato halves on top followed by 3 slices of Parma ham onto each plate. Finally toss over the pine nuts, croutons and fresh basil leaves.
