Parmesan gratinated mussels

Serves: 4

Ingredients

  • 300-400g fresh mussels
  • 2 cloves garlic, chopped
  • 1 chilli, chopped
  • 5 tbsp fresh breadcrumbs
  • 2 tbsp grated parmesan cheese
  • 2-3 tbsp melted butter
  • 2 tbsp finely chopped parsley
  • Lemon wedges and extra virgin olive oil for serving

Method

Start this recipe by blanching the cleaned mussels in a pan with a little white wine and hot water for a few minutes until they just begin to open. Remove from the pan and cut off the half shell. Place the remaining shells with the mussels on a large baking tray. Next, place the breadcrumbs, Parmesan, chilli and garlic into a food processor and season with salt and pepper. Blitz together then add in the melted butter and blitz again. Stir in the finely chopped parsley using a spoon. Carefully take spoonfuls of the mixture and cover the mussels completely. Place into the oven at 200`c and cook the mussels for 5-8 minutes until the crumb starts to colour. Remove from the oven and serve immediately with a squeeze of lemon juice and a drizzle of extra virgin olive oil on top.
