Herb crusted salmon fillets with grilled vegetables

Serves: 2

Ingredients

For the salmon

  • 4 tbsp fresh dried breadcrumbs
  • Chopped fresh herbs (Basil, parsley, thyme, dill)
  • 1 clove garlic, finely chopped
  • Finely grated zest of a lemon
  • 2 tbsp olive oil
  • Salt and pepper
  • 2 salmon fillets, skinned

For the vegetables

  • 2 courgettes, cut into thick strips
  • 1 bunch asparagus, trimmed
  • 12 cherry tomatoes
  • 2 cloves garlic, finely chopped
  • Salt and pepper
  • 2 tbsp olive oil
  • Fresh chopped thyme

Method

Start this recipe placing the vegetable ingredients into a large bowl and season well with salt and pepper. Toss together well, then transfer onto a baking tray and cook for 10-15 minutes. Meanwhile, prepare the fish. Season the salmon with salt and pepper and pan fry for a minute or two to seal all over. Remove from the pan and place onto a baking tray. Mix together the breadcrumbs, chopped herbs, garlic and lemon zest and season well with salt and pepper. Drizzle in the oil and mix together well. Press the crust mixture onto the sealed salmon and bake in the oven at 200`c for 15 minutes. To serve, place the grilled vegetables onto your serving plates and place the crusted salmon fillets on top. Drizzle with a little lemon olive oil and serve.
