Mini scones with strawberry jam and cream
Serves: 15
Ingredients
For the scones
- 200g self-raising flour
- ½ tsp baking powder
- 50g butter
- 50g caster sugar
- Milk to bind plus extra for glazing
You will also need
- 3 tbsp strawberry jam
- 1 tbsp icing sugar for dusting
- Whipped cream for filling
Method
Sift together the flour and baking powder in a bowl and rub in the butter and sugar. Mix to a soft dough with enough milk then turn out onto a floured surface. Roll out and cut into 1 ½ inch rounds. Place onto a baking sheet, glazed the tops with a little milk and bake in the oven at 200`c for 8-10 minutes. Remove from the oven and allow to cool down completely before splitting in half and filling with strawberry jam and whipped cream. Dust the tops with icing sugar and serve.
