Red pepper and herbed cream cheese pasta with chicken
Ingredients
- 1 tbsp olive oil
- 150g diced pancetta
- 1 onion, finely chopped
- 1 chicken breast, sliced
- 1 tbsp chopped fresh thyme
- 200g cream cheese with garlic and herbs
- 250g pasta, cooked
- 3 bell peppers, roasted
- Chopped parsley
- 50g walnuts, lightly toasted
Method
In a large pan, cook the pancetta with the oil over medium heat until crisp, then add in the onion and sauté` for 4 minutes until soft. Add in the sliced chicken, thyme and season well with salt and pepper and cook for 4 minutes until the chicken is cooked through. Meanwhile, peel and deseed the roasted peppers and blitz. Add the pepper sauce and the cream cheese to the pan and heat through for 3 minutes for the cream cheese to melt and create a sauce. Add in the cooked pasta and heat through. Serve in pasta bowls topped with chopped parsley and chopped toasted walnuts.
