Flapjacks with honey, dried cherries and cranberries

Serves: 12

Ingredients

  • 150g butter
  • 80g light brown sugar
  • 80ml honey
  • 250g oat flake or porridge oats (Lamb Brand)
  • 80g dried cherries (Lamb Brand)
  • 80g dried cranberries (Lamb Brand)
  • 2 tbsp desiccated coconut (Lamb Brand)
  • 50g chopped hazelnuts (Lamb Brand)
 

Method

Melt the butter, sugar and honey together in a pan over a medium heat. Add the rolled oats, dried cherries, dried cranberries, desiccated coconut and hazelnuts and stir well. Pour the flapjack mixture into a greased 30cm x 20cm baking tin. Press the mixture into the corners and smooth the top. Place into the oven at 180`c and bake for 20 minutes, or until golden-brown and bubbling. Remove from the oven and allow to cool down completely. To serve, turn out of the tin and cut into equal-sized squares.

  • 80ml għasel
  • 250g frak tal-ħafur jew porridge oats (Lamb Brand)
  • 80g ċirasa niexfa (Lamb Brand)
  • 80g cranberries niexfa (Lamb Brand)
  • 2 mgħaref frak tal-coconut (Lamb Brand)
  • 50g ġellewż imfarrak (Lamb Brand)

Method

Dewweb il-butir, iz-zokkor u l-għasel flimkien fi skutella fuq nar medju. Żid il-ħafur, iċ-ċirasa, il-cranberries, il-frak tal-coconut u l-ġellewż u ħawwad tajjeb. Itfa’ t-taħlita f’landa tal-ħami (30ċm x 20ċm). Agħfas it-taħlita mal-kantunieri u llixxa l-wiċċ. Aħmi f’temperatura ta’ 180oC għal 20 minuta, jew sakemm tieħu lewn dehbi u tibda tbaqbaq. Oħroġ il-landa u ħalli t-taħlita tiksaħ sew. Biex isservi, neħħiha mil-landa u qattagħha f’dadi ndaqs.
