Grilled boneless chicken thighs with sausage ragout and root vegetables
Serves: 2
Ingredients
- 2 boneless chicken thighs
- 2 tbsp olive oil
- 1 celery stick, sliced diagonally
- 3 shallots, peeled and halved
- 2 carrots, halved and sliced diagonally
- 2 medium potatoes, cut into 1 inch cubes
- 500g chorizo sausage cut into small cubes
- 1 Maltese sausage, skin removed
- 800ml passata
- 100ml fresh cream
- 1/2 chicken cube
- 1 pinch nutmeg
- Fresh rosemary, chopped finely
- 100ml red wine
- Salt, pepper and sugar to taste
Method
In a medium hot pan, fry the chicken in olive oil till half cooked. Remove the chicken. Add the vegetables and stir fry for 2 minutes. Add the chorizo and sausage meat, and continue to stir fry on a low flame for another 5 minutes. Add the chicken to the pan and deglaze with the red wine until the wine is reduced by half. Pour in the passata, nutmeg chicken cube, salt, pepper and sugar. Cover the pan and cook for 15 minutes on a low flame. Add the cream and fresh rosemary. Serve the chicken on top of the ragout.
