Soppa ta’ l-armala / Widow`s soup
Serves: 2
Ingredients
- 1 finely chopped onion
- 2 cloves garlic peeled and finely chopped
- 1 small cauliflower
- 1 chopped turnip
- 2 chopped zucchini
- 1 celery stick
- 1 handful peas
- 1 finely chopped carrot
- 2 spoons tomato paste
- 2 potatoes finely chopped
- Thyme springs
- Bay leaf
- Vegetable stock
- 2 Fresh Gbejna (Benna)
- 2 eggs
- Extra virgin olive oil (Borges)
- Fresh seasoning
Method
Sweat the onion and garlic in olive oil until slightly golden. Wash and chop the cauliflower, add the turnip, zucchini, chopped celery stick and carrot together with the herbs. Stir in the tomato paste and cook for a couple of minutes, season well. Cover with the vegetable stock, bring to the boil, add the potatoes and set to simmer. Before serving, add the peas, ġbejna and egg and cook further until egg is set.
