Grilled tofu and pineapple skewer with spicy curried jasmine rice

Serves: 2

Ingredients

For the kebabs

  • 6 cubes tofu cheese
  • 6 cubes pineapple
  • 6 kebab sticks
  • 2 tbsp sweet chilli

You will also need

  • 1 red onion
  • 6 baby corn
  • 1 carrot
  • 6 broccoli florets
  • 1/2 leek
  • 1 celery stick
  • 2 tbsp mild curry
  • 1 tsp curry paste
  • 1 chilli
  • 1 tbsp sugar
  • 1 cup jasmine rice
  • 1 cup coconut cream
  • 1 tsp mango chutney
 

Method

Put the pineapple and tofu in two kebab sticks alternatively, brush with sweet chilli and grill. Dice the carrots and blanch, blanch also the broccoli and than sauté in butter and sugar with the diced leeks, celery and onions. Add the curry powder, paste, chopped chilly and baby corn, sauté until browned. Add milk, chutney and simmer until thickened, than remove from heat. Boil the rice in salted water and serve with the curried vegetables on.
