Breakfast muffins

Serves: 12

Ingredients

  • 250g frozen or fresh berries
  • 2 large eggs, beaten
  • 100g caster sugar
  • 225ml milk
  • 100g butter, melted
  • 1tsp vanilla essence
  • 300g plain flour
  • 100g chopped pecan nuts
  • 1tbsp baking powder
  • 1/2tsp salt
  • 2tbsp demerara sugar
  • 2 tbsp oat flakes

Method

Preheat the oven to 200`c. Place the frozen berries in a sieve over a bowl and leave to defrost if using. Mix together the eggs, caster sugar, milk, melted butter and vanilla extract in a large bowl. Sift the flour, baking powder and salt over the top and briefly fold together, making sure that you don’t over beat (The less you mix everything together, the lighter the cooked muffins will be) Don’t worry if the mixture looks rather lumpy at this stage. Tip in the defrosted and strained berries, (or the fresh berries if using) and again fold in briefly. Divide the mixture between 14-16 muffin cases, making sure not to fill them more than three-quarters of the way up. Sprinkle the tops with the demerara sugar and oat flakes. Cook in the oven for about 20 minutes until risen and golden. Remove from the oven then cool in the tin for 5 minutes before transferring to a wire rack. Enjoy just warm, or cooled.

  • 250g frott irqiq frisk jew iffriżat
  • 2 bajdiet kbar imħabbta
  • 100g zokkor fin (caster sugar)
  • 225ml ħalib
  • 100g butir imdewweb
  • 1 kuċċarina essenza tal-vanilla
  • 300g dqiq plain
  • 100g ġewż pekan imfarrak
  • 1 mgħarfa trab tal-ħami
  • ½ kuċċarina melħ
  • 2 mgħaref zokkor demerara
  • 2 mgħaref frak tal-ħafur

Method

Saħħan il-forn għal temperatura ta’ 200oC. Poġġi l-frott irqiq iffriżat f’passatur. Jekk se tuża l-frott tal-friża ħalli s-silġ jinħall. Fi skutella kbira ħabbat flimkien il-bajd, iz-zokkor fin, il-ħalib, il-butir imdewweb u l-essenza tal-vanilla. Għarbel id-dqiq, it-trab tal-ħami u l-melħ u ħawwadhom ħafif mat-taħlita l-oħra, mingħajr ma tħawwad iżżejjed (inqas ma tħallat kollox flimkien, il-muffins iktar ikunu ħfief). Tinkwetax jekk it-taħlita jkun fiha ħafna boċċi. Itfa’ l-frott irqiq li tkun saffejt (jew il-frott frisk jekk qed tuża lilu) u ħawwad ħafif. Aqsam it-taħlita f’14-16-il landa tal-muffins. Timlihomx aktar minn tliet kwarti. Ferrex iz-zokkor demerara u l-frak tal-ħafur fil-wiċċ. Aħmi għal madwar 20 minuta sakemm jogħlew u jiħmaru. Imbagħad oħroġhom u ħallihom jiksħu fil-laned għal 5 minuti qabel ma tpoġġihom fuq gradilja. Tista’ tikolhom sħan jew kesħin.
