Breakfast brioche with scrambled eggs and smoked salmon

Serves: 2

Ingredients

For the scrambled eggs

  • 4 eggs
  • Knob of butter
  • 1 tbsp chopped chives
  • Fresh salt and pepper

You will also need

  • 250g smoked salmon
  • 2 milk brioche, cut in half
  • Lemon wedges and chives for serving

Method

For the scrambled eggs, whisk the eggs in a bowl with the chopped chives. Season to taste with salt and freshly ground black pepper. Melt the butter in a pan over a medium heat and add in the brioche. Toast on both sides for 2 minutes. Remove from the pan and place on your serving plates. Heat another knob of butter in the same pan then pour in the eggs, stirring a little to break the eggs up slightly as they set. Cook for 1-2 minutes, then remove the pan from the heat and set the eggs aside to finish cooking for a further 1-2 minutes. To serve, spoon the scrambled eggs over the toasted brioche and sprinkle over a little chopped chives. Arrange the smoked salmon on the side, and finish with the lemon wedges

Għall-bajd imħabbat
  • 4 bajdiet
  • Ftit butir
  • 1 mgħarfa weraq tal-kurrat selvaġġ (chives) imqatta’
  • Bżar u melħ frisk
Għandek bżonn ukoll
  • 250g salamun iffumigat
  • 2 brioche tal-ħalib maqsuma min-nofs
  • Flieli tal-lumi u kurrat selvaġġ biex isservi

Method

Ħabbat il-bajd fi skutella kbira u żid il-kurrat. Ħawwar bil-melħ u l-bżar mitħun frisk. Dewweb il-butir f’taġen fuq nar medju u itfa’ l-brioche. Ixwihom miż-żewġ naħat għal 2 minuti. Neħħihom mit-taġen u poġġihom fuq il-platti li tkun se sservi fihom. Fl-istess taġen erġa’ saħħan ftit butir u itfa’ l-bajd. Meta t-taħlita tkun qagħdet, ħawwad ftit il-bajd ħalli jitfarrak. Sajjar għal minuta jew tnejn, imbagħad neħħi t-taġen minn fuq in-nar u ħallihom għal minuta oħra, jew tnejn, fit-taġen biex ikomplu jsiru. Biex isservi, itfa’ l-bajd imħabbat fuq il-brioche mixwija u ferrex fuqhom ftit kurrat imqatta’. Irranġa l-biċċiet tas-salamun fil-platt u servi wkoll ftit flieli tal-lumi magħhom
