Egg noodle salad with sesame prawns and monge-tout
Serves: 2
Ingredients
- 150g egg noodles
- 1 black courgette
- 8 baby asparagus
- 2 tsp chopped coriander
- 1tsp sesame seeds
- 4 tbsp sesame oil
- 10 mange tout
- 10 king prawns, tail on
- 1/2 leek
- 2 spring onions
- 2 tbsp soy sauce
- 1 tsp honey
Method
Slice the courgette, leek and blanched asparagus, mange tout and toss on high heat in sesame oil together with the prawns. Remove from heat add cold cooked noodles, chopped spring onions, soy sauce, honey, sesame seeds and chopped coriander. Add some more sesame oil if noodles is sticky and keep in the fridge before serving
