Strawberry cheesecake cups with crushed pistachios

Serves: 4

Ingredients

For the filling

  • 200g cream cheese
  • 250g Greek yogurt
  • 150ml cream, whipped
  • 50g icing sugar
  • Zest of a lemon

For the base

  • 50g toasted pistachios, chopped
  • 150g shortbread biscuits, crushed
  • 50g melted butter
You will also need fresh strawberries and mint leaves to decorate

Method

Start this recipe by mixing the pistachios, biscuits and butter together to make the base and put aside. Make the filling by folding all the ingredients together. To put together, place half of the base mixture into your glasses and top with half of the filling. Chop some strawberries and place a spoonful into each glass. Repeat the process again with the biscuits and filling. Top with extra strawberries and a few crushed pistachios.
