Chocolate fruit and nut Christmas wreaths

Ingredients

  • 150g dark chocolate, chopped (Novi)
  • 120g unsalted butter
  • 35g soft brown sugar
  • 1 tbsp cocoa powder
  • 150g morning coffee biscuits, crushed
  • 2 tbsp brandy
  • 40g walnuts, roughly chopped
  • 40g whole almonds, toasted
  • You will also need extra melted chocolate, dried fruits and nuts to decorate

Method

In a medium sized saucepan, melt together the chocolate, butter, soft brown sugar and cocoa powder. When ready, remove the pan off the heat and mix in the walnuts, almonds, crushed biscuits and brandy. When the mixture has come together, turn it onto a large sheet of double greaseproof paper. Form the mixture into a sausage shape, and roll up into a ring twisting the two ends to tighten up. Place onto a plate and chill for an hour in the fridge till firm. When ready, remove from the fridge and brush completely all over with melted chocolate. Allow to set, then brush liberally again. Whilst still soft, decorate the top of the ring with a selection of dried fruits and nuts. Allow to set completely before serving dusted lightly with icing sugar.
