Seafood bruscetta
Serves: 2
Ingredients
- 1 baguette or ciabatta, sliced into 1cm thickness
- 200g fresh mussels, washed
- 2 tomatoes, peeled, seeded, and diced
- 1/2 garlic clove, sliced
- 1/2 shallot, finely chopped
- 1/2 chilli, sliced
- Basil, choppedParsley, chopped
- Fresh pepper
- Sea salt
- 4 tbsp extra virgin olive oil
Method
In a wide, shallow pan over medium heat, warm half the oil. Add half the garlic and shallot and cook until they turn gold, about 3 minutes. Add the fresh mussels and chilli, cover, and cook over high heat until the shells are open, about 5 minutes. Remove from the heat. When cool enough to handle, remove and discard the shells. In a bowl, add the tomatoes, mussel mixture, parsley and basil. Grill or toast the bread, drizzle with extra virgin olive oil, and top each slice with a portion of the mussel mixture.
