Carrot and orange soup

Serves:

Ingredients

  • 400g carrots
  • 1 orange
  • 2 onions, chopped
  • 50g butter
  • 600ml chicken stock
  • Salt and pepper
  • 1 clove garlic

Method

Start by placing the onions, garlic, carrots and butter in a sauce pan and saute for 2 minutes. Gradually add in the stock, then bring to boil. Squeeze in the juice from the orange, reduce the heat and simmer for 10 minutes. When ready, blitz the soup in a processor, season with salt and pepper and serve.
