Beef fillet with lobster
Ingredients
- 1 small lobster
- 400g beef fillet
- 100g Portobello mushrooms
- 30g grated cheese
- 50ml fresh cream (Benna)
- 1 tbsp fresh thyme
- 50ml white wine
- 3 cloves garlic
- ½ red onion
You will also need
- 1 large sweet potato
- 1 knob salted butter
- 1 handful spinach leaves
- ½ red onion
- 2 cloves garlic
Method
Cut the beef fillet in 2 portions, seal well remove from heat and finish in oven at 170 degrees until cooked to your likings allow to rest for 1 minute and serve. Cut the lobster in half and toss the diced meat in salted butter, chopped garlic, diced onion and fresh thyme. Add white wine and cream and simmer and thicken with the grated cheese. Meanwhile, prepare the vegetables. Chop the garlic, slice the onions than brown lightly in olive oil and toss in the spinach leaves. Boil the sweet potatoes until softened mash season and finish with salted butter. Serve the beef fillets with the lobster on top.
