Chilli chocolate fondants

Ingredients
- 260g dark chocolate with chilli (Lindt)
- 70g butter
- 50g sugar (Lamb Brand)
- Pinch of salt
- 3 eggs
- 30g plain flour (Lamb Brand)
- Mint leaves and berries to garnish
Method
Preheat oven to 200°c. Grease 8 ramekins with melted butter. Melt the butter and chocolate over a bain marie. In a separate bowl whisk the eggs, sugar and salt until light pale and creamy. Gently fold in the melted butter and chocolate. Sift the flour and fold in gently. Pour the mixture into the prepared moulds and cook for 8 minutes. Allow the chocolate fondants to rest for a few seconds before un-moulding. Serve garnished with the berries and mint leaves.
