Stuffed turkey with a rabbit, sage and apple stuffing
Ingredients
For the turkey
- 400g turkey breast
- 100g rabbit mince
- 20g dried apples
- 2 tbs chopped sage
- 1 onion
- 1 tbsp salted butter
- 2 tbsp cranberry sauce
- ½ glass red wine
- ½ glass chicken stock
- 6 slices prociutto crudo (Casa Modena)
Vegetables and potatoes
- 100g pumpkin
- 50g broccoli
- 2 large potatoes
- 20g salted butter
- 2 tbsp fresh cream (Benna)
Method
Dice half the onion and saute in butter, add the chopped apples toss than mix well with rabbit mince and sage. Open the turkey breast flat, place the filling in the middle wrap in prosciutto than in silver foil tightly. Using a well preheated pan and some oil fry the turkey wrapped in foil than finish in oven at 180`c for approximately 60 minutes Chop the onions and fry in some butter add the cranberry sauce and allow to caramelize, pour in the red wine simmer for 1 minute and then the stock, continue simmering until sauce is thick enough. Meanwhile, dice the potatoes in cubes and boil until soft, mash then add the butter, cream and seasoning. Slice the pumpkin, roast and blache the broccoli in boiling water and serve with the Turkey.
