Chocolate and orange cupcakes

Serves: 12

Ingredients

  • 120g plain flour
  • 140g caster sugar
  • 1 tsp baking power
  • 40g unsalted butter
  • 50g dark chocolate, melted
  • 1 egg
  • Juice and zest of an orange
  • You will also need white chocolate and coloured sprinkle to decorate

 

Method

Preheat the oven to 170`c. Line a 12-hole muffin tin with paper cases. Mix the flour, sugar and baking powder together in a food processor. Add the butter and pulse until combined. Whisk the melted chocolate, egg and orange juice together in a jug. Stir the chocolate mixture into the flour mixture until just combined. Spoon the mixture into the cases and bake for 15-20 minutes, or until risen and golden brown and a skewer inserted into the middle comes out clean. Remove from the oven and set aside to cool completely. Melt the white chocolate and spread generously over the cupcakes. Decorate with coloured sprinkles and allow to set.
