Pasta with ricotta cheese

Ingredients

  • 400g pasta (macaroni, elicoladi or any short pasta of your choice)
  • 400g ricotta cheese (GALBANI)
  • 2 cloves garlic, finely chopped
  • 4 eggs
  • 1 tbsp chopped parsley
  • Fresh seasoning
  • 2 tbsp butter
  • Grated cheese
  • Tomato sauce

Method

Start this recipe by cooking the pasta in boiling salted water for approximately 8 minutes. In the meantime, put the ricotta in a bowl and mash it lightly with a fork. Beat the eggs and add to the ricotta cheese, along with the parsley, garlic, salt and pepper. Drain the pasta and return it to the pan. Add the ricotta mixture and stir in thoroughly. Return to the heat and warm till the pasta is heated through. Add in the butter and serve in large pasta bowls with tomato sauce and grated cheese.
