Pork fillets Florentine

Ingredients

  • 3 tbsp olive oil (PREGO)
  • 4 cloves garlic, chopped
  • 1 chilli , deseeded and chopped
  • 10 fresh sage leaves
  • 800g pork fillets, cut into chunks
  • 450g canned butter beans, drained
  • 6 large ripe tomatoes, peeled and coarsely chopped
  • Salt

Method

Heat the oil in a large pan and add the garlic, chilli and sage. Cook over a medium heat until the garlic changes colour. Mix in the pork and cook over a high heat for a few minutes. Add the beans and cook for 2 minutes, stirring occasionally. Season with salt and mix in the tomatoes. Simmer, stirring occasionally, until the meat is tender. Suggested accompanying wine: DELICATA Pjazza Regina red I.G.T. Maltese islands

  • 800g fletti tal-majjal, mqattajn dadi kbar
  • Bott ta’450g fazola bajda
  • 6 tadamiet kbar, mqaxxrin u mqattajn

Method

Aqsam il-bzaru minn nofs ghat-tul, nehhi z-zerrieha u qattghu irqiq. Saffi l-fazola. Sahhan iz-zejt f’tagen u zid it-tewm, il-bzaru ahmar u s-salvja. Sajjar fuq nar moderat sakemm it-tewm jibda jibdel il-kulur. Zid il-majjal u sajjar fuq nar gholi ghal ftit minuti filwaqt li thawwad kultant. Zid il-fazola u sajjar ghal madwar 2 minuti filwaqt li thawwad kultant. Hawwar bil-melh umbaghad zid it-tadam. Hawwad u halli t-tahlita ‘ssir sakemm il-laham isir tari.
