Carrot cake puddings with yogurt and lime cream cheese

Ingredients

  • 250g plain flour
  • 2 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 150g light brown sugar
  • 50g walnuts, chopped
  • 220g canned pineapple slices, drained and chopped
  • 50g sultanas
  • 2 ripe bananas, mashed
  • 1 passion fruit
  • 150g carrots, grated
  • 150ml vegetable oil
  • 3 eggs
  • 200g cream cheese (VITASNELLA SPALMABILE)
  • zest of 2 limes
  • You will also need 8 pudding moulds

Method

Preheat the oven to 160C while you prepare the pudding moulds. Grease the moulds with some butter and dust liberally with plain flour. This will prevent the puddings from sticking during cooking. Next, sift the flour, baking powder, cinnamon, salt and bicarbonate of soda into a bowl and mix well. Add the sugar, walnuts, pineapple, sultanas, mashed banana, passion fruit pulp, grated carrot, oil and eggs and mix well to completely combine. Pour the cake mixture into the prepared pudding moulds and place into the oven. Bake for 25-30 minutes or until cooked through. Test that the puddings are cooked by pushing a skewer into the centre of the cake. If the skewer comes out clean the cake is ready. Remove the cooked puddings from the oven while you prepare the lime cream cheese. Place the cream cheese in a bowl and mix in the zest and juice of 1 lime. Place the bowl in the microwave and heat for 20 seconds to melt the cream cheese to a pouring consistency. Alternatively, you can heat the cream cheese in a small saucepan over a low heat till melted. Place the warm puddings on your serving plates and drizzle over the lime cream cheese. Sprinkle over the chopped pecan nuts and the zest of the remaining lime before serving. Suggested accompanying wine: DELICATA Casella Moscato Sweet White Wine

  • 2 kuċċarini trab tal-ħami
  • kuċċarina bikarbonat tas-soda
  • ½ kuċċarina melħ
  • 150g zokkor ismar, light
  • 50g ġewż, imfarrak
  • 220g roti tal-pineapple tal-bott, imsaffija u mqattgħin
  • 50g passolina
  • 2 bananiet misjura, mgħaffġa
  • 1 passion fruit
  • 150g karrotti, maħkuka
  • 150ml żejt veġetali
  • 3 bajdiet
  • 200g ġobon artab (VITASNELLA SPALMABILE)
  • il-qoxra maħkuka ta’ 2 limes
  • Għandek bżonn ukoll 8 forom tal-pastini

Method

Sakemm tipprepara l-forom, ikwi l-forn għall-160oC. Idlek il-forom bi ftit butir u ferrex id-dqiq. Dan jgħin biex il-pastini ma jeħlux mal-forma. Imbagħad, għarbel id-dqiq, it-trab tal-ħami, it-trab tal-kannella, il-melħ u l-bikarbonat tas-soda fi skutella u ħawwad tajjeb. Żid iz-zokkor, il-ġewż, il-pineapple, il-passolina, il-banana mgħaffġa, is-sugu tal-passion fruit, il-karrotti maħkuka, iż-żejt u l-bajd u ħawwad sew sakemm l-ingredjenti jidħlu f’xulxin. Itfa’ t-taħlita fil-forom u daħħalhom fil-forn. Aħmi għall-25-30 minuta jew sakemm ikunu saru. Daħħal stikka tal-ħadid fin-nofs tal-pastini u jekk din toħroġ nadifa, il-pastini jkunu saru. Oħroġhom mill-forn u pprepara t-taħlita tal-ġobon u l-lime. Itfa’ l-ġobon artab fi skutella u ħawwad miegħu l-qoxra maħkuka u l-meraq tal-lime. Daħħal l-iskutella fil-microwave u saħħan għal 20 sekonda biex il-ġobon jinħall. Inkella, tista’ ssaħħan il-ġobon f’kazzola żgħira fuq nar bati sakemm jinħall. Poġġi l-pastini fil-platti li tkun se sservi fihom u ferrex fuqhom it-taħlita tal-ġobon. Itfa’ wkoll ftit ġewż pekan u l-qoxra maħkuka tal-lime li jkun fadal.
