Maltese sausage bake

Ingredients

  • 2 tbsp olive oil
  • 6 garlic cloves, halved
  • Some fresh rosemary sprigs
  • 4 Maltese sausages
  • 500g potatoes, thinly sliced
  • 400g tomato pulp
  • 250g peas
  • Salt and freshly ground pepper
 

Method

Prick the sausages with a fork. Heat the oil in a large pan and add the garlic, rosemary and sausages. Fry over a high heat until the sausages start to brown. Mix in the potatoes and cook for around 4 minutes stirring often. Pour in the tomato pulp and mix in the peas. Season and bring to a simmer. Place the mixture in an oiled baking pan and bake in a moderate to hot oven 180`c for 40 minutes. Suggested accompanying wine: DELICATA Medina Sangiovese I.G.T. Maltese Islands
