Buttermilk and strawberry cake

Ingredients

  • 150g caster sugar
  • 60g butter, softened
  • 1 egg
  • zest of a lemon
  • 1 tsp vanilla essence
  • 120ml buttermilk
  • 140g plain flour
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • 1 small box strawberries
  • icing sugar for decorating

Method

Grease and flour a 23cm cake tin. Put the butter and sugar in a bowl and beat till pale. Add in the egg, vanilla essence and lemon zest and mix till smooth. Stir in the flour, baking powder and soda, and then finally mix in the buttermilk. Pour the batter into the prepared cake tin and arrange the strawberries on the top of the cake. Sprinkle over the remaining tablespoon of sugar and bake for 30 minutes, at 200`c. Leave the buttermilk and strawberry cake to cool down completely before removing from the tin. Serve the cake dusted with icing sugar.

  • 1 bajda
  • qoxra maħkuka ta’ lumija
  • 1 kuċċarina essenza tal-vanilla
  • 120ml ħalib tal-butir (buttermilk)
  • 140g dqiq plain
  • ½ kuċċarina baking powder
  • ¼ kuċċarina baking soda
  • 1 kaxxa frawli żgħira

Method

Idlek landa tal-kejk ta’ 9 pulzieri u ferrex ukoll ftit dqiq. Poġġi l-butir u z-zokkor fi skutella u ħabbat sakemm it-taħlita tieħu lewn ċar. Żid il-bajda, il-vanilla u l-qoxra tal-lumija maħkuka u ħawwad sakemm ikollok taħlita ratba. Żid id-dqiq, il-baking powder u s-soda u fl-aħħar żid il-ħalib tal-butir. Itfa’ t-taħlita fil-landa tal-kejk li tkun ippreparajt u poġġi l-frawli fuq il-wiċċ kollu. Ferrex mgħarfa zokkor fil-wiċċ u aħmi għal nofs siegħa f’temperatura ta’ 200oC. Ħalli l-kejk jiksaħ qabel taqilgħu mil-landa.
