Mozzarella chicken with tomatoes, crispy prosciutto and Parmesan shavings

Ingredients

  • 2 chicken breasts, sliced in half
  • 1 tbsp olive oil
  • fresh seasoning
  • 1 buffalo mozzarella, sliced (GALBANI)
  • 2 beefy tomatoes, sliced
  • 4 tbsp tomato salsa
  • 8 basil leaves
  • 2 slices prosciutto (GALBANI)
  • Parmesan shavings (GALBANI)

Method

Start by heating the olive oil in a large pan and cook the chicken slices on both sides for about 4 minutes, or until golden brown. Season well with salt and pepper and take the chicken out of the pan and place on a baking tray. Place 2 basil leaves on top of the 2 chicken slices and spread over a spoon of salsa. Place a slice of mozzarella over the salsa and cover with the sliced tomatoes. Place the remaining chicken slices on top of each stack and repeat the process with the basil, salsa, mozzarella and tomatoes. Scrunch up the prosciutto and place a piece on both of the chicken stacks. Place the baking tray under a hot grill to cook till the prosciutto is crispy and the mozzarella is melted. Serve the mozzarella chicken immediately with some roasted potatoes. Suggested accompnying wine: DELICATA Medina Syrah, Carigan, Grenache D.O.K. Superior Malta

Saħħan iż-żejt taż-żebbuġa f’taġen kbir u sajjar il-biċċiet tat-tiġieġ miż-żewġ naħat għal 4 minuti, jew sakemm jiħmaru. Ħawwarhom bil-bżar u l-melħ, neħħihom mit-taġen u poġġihom f’dixx. Poġġi 2 werqiet ħabaq fuq biċċtejn tiġieġ u ifrex mgħarfa zalza tat-tadam. Poġġi biċċa mozzarella fuq iz-zalza u għatti b’biċċa tadama. Poġġi l-biċċtejn tiġieġ oħra u rrepeti l-proċess bil-ħabaq, iz-zalza, il-mozzarella u t-tadam. Għaffeġ ftit il-perżut u poġġi biċċa fuq kull torri tat-tiġieġ. Daħħal id-dixx taħt grilja taħraq u sajjar sakemm il-perżut jiġi jqarmeċ u l-mozzarella ddub. Servi t-tiġieġ bi ftit patata mixwija.
