Healthy lime and avocado cheesecake

Ingredients
For the base
- 4 tbsp desiccated coconut
- 2 tbsp chopped pistachios
- 100g dates – soaked in water
For the filling
- 2 avocados
- Juice of a lime
- Zest of 2 limes and 1 lemon
- 200g vanilla soya yogurt (Alpro)
- 2 leaves gelatine
- You will also need fresh blueberries and extra pistachios for serving
Method
Start by lining a loaf tin with grease proof paper. Next, make the base by whizzing together the coconut, pistachios and dates. Press into the base of the tin. Next, soak the gelatine in the lime juice for 4 minutes, then heat up in the microwave to melt. Place the avocados in a processor with the lemon and lime zest and yogurt and blitz for 10 seconds. Pour in the melted gelatine and whiz together till combined. Spoon the filling over the base and even out. Cover the top with cling film and chill for 2 hours. When ready to serve, cut into thick fingers and decorate the top of each piece with blueberries and pistachios.

- Ikollok bżonn ukoll ‘blueberries’ friski u pistaċċi żejda biex isservi
Method
Ibda billi tiksi landa b’karta. Sussegwentement, agħmel il-bażi billi tħawwad f’daqqa il-coconut, pistaċċi u tamal. Agħfas fil-qiegħ tal-landa. Sussegwentement, xarrab il-ġelatina fil-meraq tal-luminċell għal 4 minuti, imbagħad saħħan fil-microwave biex tiddewweb. Poġġi l-avokado f’proċessur mal-qxur tal-lumi u luminċell u l-jogurt u ħawwad għal 10 sekondi. Ferra l-ġelatina mdewwba u ħawwad flimkine. Ferra fil-wiċċ tal-bażi. Għatti l-wiċċ bi cling film u kessaħ għal sagħtejn. Meta tkun lest biex iservi, aqta’ biċċiet wesgġa ta’ saba’ u iddekora l-wiċċ ta’ kull biċċa bi frott u pistaċċi.
