Goulash soup

Serves: 6-8

Ingredients

  • 500g beef chuck, diced
  • 2 tbsp flour
  • 1 onion finely chopped
  • 2 cloves garlic
  • 1 carrot, chopped
  • 1 celery stick
  • 1 bell pepper diced
  • 2 tomatoes, diced
  • 1 tsp smoked paprika (AJS)
  • 1 can tomato passata (Cirio)
  • 1 sweet potato, diced
  • ½ tsp caraway seeds
  • 500ml beef stock
  • 2 bay leaves
  • Fresh seasoning
  • Plain yogurt for serving (Benna)

Method

Roll the beef in the flour, season with salt and pepper and seal in hot fat in a deep double bottom pot until browned. Next add the vegetables, paprika, caraway seeds, tomato passata, bay leaves and the beef stock. Bring to the boil, lower the flame and set to simmer gently for at least 1 ½ hours. Serve the soup with yogurt.

  • 2 sinniet tewm
  • zunnarija, mqatta ‘
  • zokk karfusa
  • bżaru mqatta’
  • 2 tadamiet imqatta’
  • kuċċarina paprika
  • bott passata tat-tadam
  • patata ħelwa, imqatta ‘
  • nofs kuċċarina żerriegħa tal-‘caraway’
  • 500ml stokk taċ-ċanga
  • 2 weraq randa
  • ħwawar friski
  • jogurt biex isservizz
