Zucchini fritters with minted Greek yogurt

Ingredients

For the fritters

  • 700g grated zucchini
  • 1 tsp salt
  • 40g plain flour
  • 40g grated Parmesan cheese
  • 2 cloves garlic, crushed
  • 1 tbsp snipped fresh chives
  • 2 eggs, beaten
  • 1 small can sweetcorn
  • Fresh salt and pepper
  • Olive oil for frying

For the dressing

  • 150g Greek yogurt
  • Few mint leaves
  • Squeeze lemon juice
  • 1 clove garlic, crushed
  • Fresh salt and pepper

Method

Mix together the grated zucchini and salt and place in a colander over the sink for 15-20 minutes, then squeeze to remove the excess water. It is important to squeeze out as much water as possible otherwise the fritters will become soggy. When ready, place the zucchini into a bowl with all the remaining ingredients and together well. Heat a pan with a little olive oil and drop in tablespoons of the zucchini batter. Flatten out and fry on each side for 2 or 3 minutes until golden brown. To make the minted yogurt dressing, place the Greek yogurt, mint leaves, lemon juice, garlic and a little salt and pepper into a small processor and whiz together. Serve the minted yogurt dressing alongside the delicious zucchini fritters.
