Wholemeal pizza alla Norma

Serves: 2

Ingredients

For the pizza base

  • 250g whole meal flour (Lamb Brand)
  • 250g plain flour (Lamb Brand)
  • 12g dried yeast
  • 300ml warm water
  • 50g butter
  • 1 tsp salt

You will also need

  • 250g Fresh mozzarella (Benna)
  • Tomato and basil sauce (Star)
  • 1 egg plant, sliced and fried
  • Chopped garlic
  • Ricotta salata
  • Fresh basil leaves
  • Extra virgin olive oil (Borges)

Method

Knead all the dough ingredients together into soft pliable dough. Turn onto a lightly dusted surface and cover, allow resting until dough doubles in bulk. Roll the dough onto a greased pizza pan. Spread with the tomato sauce, chopped garlic and mozzarella. Allow resting before baking. Once out of the oven dress with the fried aubergines, grate over it the ricotta salata. Garnish with picked basil leaves and drizzle with the olive oil.
