Whipped ricotta and ġbejna bruschetta

Ingredients

  • 1 Maltese bezzun, cut into thick slices
  • Olive oil for drizzling
  • Salt and pepper to taste
  • 1 x 250g tub ricotta (Benna)
  • 3 white ġbejniet, dried not fresh (Benna)

You will also need various toppings:

  • Parma ham, figs, honey
  • Avocado, strawberries, toasted pumpkin seeds
  • Mixed cherry tomatoes, fresh basil, toasted pine nuts
  • Grilled peach, walnuts, fig jam

Method

Start this recipe by making the whipped ricotta. Place the ricotta, 2 white ġbejniet and 1 tbsp extra virgin olive oil into a food processor and blitz till smooth and creamy. Place in the fridge to chill. Next, drizzle the sliced Maltese bread with olive oil and season with salt and pepper. Grill on the BBQ or in the oven till golden. Spread with the whipped ricotta and serve with the various toppings whilst still warm.
