Watermelon and vodka lollies with basil

Serves:

Ingredients

  • 60ml vodka
  • 120ml Triple Sec or simple syrup
  • 3 tablespoons fresh lime juice
  • Fresh pureed watermelon
  • Fresh basil leaves
  • You will also need lollipop moulds

Method

Start this recipe by preparing your watermelon puree. Skin the watermelon and blitz in a food processor. Pass through a fine sieve and discard the bits, to give you the pureed watermelon. Mix with the vodka, triple sec or syrup and lime juice. Toss in a few fresh basil leaves and pour into your lolly pop moulds. Place in your stick and freeze for 3 hours. Alternatively you can serve the mixture chilled poured into cocktail glasses.
