Warm spinach and goat cheese tart with roasted apples and walnut dressing

Serves: 2

Ingredients

For the pastry

  • 250g flour
  • 125g unsalted butter
  • 1 egg
  • 1 tbsp chilled water
  • Pinch salt

You will also need

  • Bunch spinach
  • 1/2 red onion
  • 1 goat cheese (Benna)
  • 80g eggs
  • ½ cup fresh cream (Benna)
  • 1 tsp chopped parsley
  • 1 apple
  • 1 tbsp brown sugar
  • 5 tbsp olive oil
  • 3 crushed walnuts
  • 1 tsp thyme leaves
  • Bunch mixed leaves
  • 1 spring onion
 

Method

In a processor mix well the flour, butter and salt until crumbled. Meanwhile beat the egg and water and mix with the flour until dough is binded. Line 2 tartlets and blind bake without coloring until half cooked, remove from oven leave in the mould and allow to cool. Slice the onion and sauté until softened, add in the spinach leaves and toss, place the mixture in the par-baked tartlets. Cut the goat cheese in cubes and place also in the tartlet. Meanwhile Beat the eggs And cream, mix in the parsley than pour it in the tartlets. Bake in a pre-heated oven at medium temperature, until eggs mixture is cooked. Quarter the apples and sprinkle with sugar, place under the grill until browned. Add the oil to the walnuts, mix in thyme and roast on low temperature to infuse the walnut flavor, than keep in the fridge until use. Chop the spring onion and once apples are cooled mix them with the lettuce altogether, mix walnut dressing and serve with the tartlet.
