Creamed lobster on herb gnocchi and a lobster butter sauce

Serves: 2

Ingredients

  • 1 whole lobster
  • 1/2 leek
  • 1 clove garlic
  • 1 knob salted butter (President)
  • 1/4 glass white wine
  • 1/2 glass fresh cream (Benna)
  • 1 tbsp grated Parmesan

For the butter sauce

  • 1 onion
  • 3 spring onions
  • 4 cloves garlic
  • 1 celery sticks
  • 2 knobs butter (President)
  • 1/2 glass white wine

For the gnocchi

  • 200g boiled potatoes
  • 80g plain flour
  • 1/2 beaten egg
  • 1 tbsp chopped parsley
  • Knob salted butter (President)

Method

Cut the lobster lengthwise and remove all the meat, chop the leeks, garlic and sauté in butter, roughly cut the lobster meat in cubes and toss on low heat with the leeks. Increase the heat and add the white wine than cream, simmer and fill the lobster tail on an oven tray. Sprinkle with cheese and grill in the oven. In a deep pan put the lobster head and add the roughly chopped onions, garlic, celery and sauté on low heat in butter until butter is browned than add the wine and a glass of water. Simmer for 45min than blend and strain to obtain a clean bisque. For the gnocchi, mix well all the ingredients together until a dough consistence season and roll in a long sausage on dusted flour. You may add more flour to the potato mix if it`s too soft to roll. Cut the potatoes in small gnocchi and shallow fry just before serving.
