Warm blueberry croissant bake

Serves: 6

Ingredients

  • 3 large croissants, cut into cubes
  • 150g fresh blueberries
  • 200g single cream (Elmlea)
  • 130g caster sugar
  • 2 eggs
  • 1 tsp vanilla essence
  • 240ml milk
  • 1 tbsp sugar

Method

Grease a 22cm square oven dish and scatter in the croissant cubes. Sprinkle over the fresh blueberries. In a bowl, mix together the cream, sugar, eggs, vanilla and milk with an electric beater. Pour the mixture over the croissants, pushing the pieces down to soak up the liquids. Allow to sit for 20 minutes. When ready, sprinkle the top with the remaining sugar and bake in the oven at 180`c for 35-40 minutes. Best served whilst still hot.
