Vegetarian wraps

Ingredients

  • 1 soft flour wrap
  • ½ red pepper
  • ½ leek
  • ½ orange pepper
  • Handful rucola leaves
  • 100g cream cheese
  • 4 cherry tomatoes
  • 4 fancy toothpicks for serving

 

Method

Cut the peppers and leeks in thin strips and cook until softened. Mix the cream cheese to soften and spread over the wrap. Arrange over the cooked vegetables followed by some rucola leaves. Roll the wrap thightly and put in the frigde for 30 minutes. Remove from the fridge cut into finger food portions diagonally. Insert a toothpick with a cherry tomato on top of each.
