Vegetarian filo pastry spiral
Serves: 6-8
Ingredients
- 1 onion, finely chopped
- 2 cloves garlic, finely chopped
- 1 tbsp olive oil (Filipo Berrio)
- 100g cooked lentils
- 100g basmati rice, cooked
- 75g black olives, chopped
- 75g sundried tomatoes, chopped
- 2 tbsp chopped fresh mint and coriander
- Zest of a lemon
- 150g feta cheese, crumbled
- 1 egg, beaten
- 6 sheets filo pastry
- 50g melted butter (President)
- Sesame seeds to decorate
Method
Prepare this recipe by frying together the onion and garlic with the oil and place into a large bowl. Add in cooked lentils, rice, olives, sundried tomatoes, herbs, lemon zest, feta cheese and the beaten egg and mix together well. Put aside while you prepare the pastry. Lay out 4 sheets of filo pastry side by side and overlap slightly to join together. Brush the pastry all over with the melted butter. Cut the remaining 2 sheets of filo pastry in half and place onto of the other 4 sheets. Once again brush again with melted butter. Place the filling in one line along the long side of the pastry strip, 5 cm away from the edge. Next, carefully roll up the pastry from one end to another. Roll up the filled filo from one end into a large spiral. Carefully lift up onto a greased baking sheet, brush the top lightly with the remaining butter and sprinkle over the sesame seeds. Bake in the oven at 200`c for about 40 minutes or until golden brown.
