Vegetarian couscous pitta with fresh basil and pine nut ricotta

Serves: 2

Ingredients

  • 300g cooked couscous (Ainsley)
  • 1 egg
  • 3 tbsp flour
  • 2 tbsp grated Parmesan
  • 3 pita bread
  • Bunch mixed lettuce
  • 1 tbsp chopped basil
  • 1tsp grated lime zest
  • 2 tbsp crushed pine nuts
  • 150g ricotta

Method

Mix the couscous,egg, flour and Parmesan in a bowl, form 6 small patties and shallow fry them in a sauté pan until browned. Cut the pitta in quarters and grill them to serve the patty in the middle. Mix all the ingredients together and serve on each patty with some fancy lettuce in the middle of the pitta.
