Tuna party bites

Ingredients

For the filling

  • 1 tine tuna, drained (3 Leaves)
  • 1 spring onion, finely sliced
  • 150g softened cream cheese
  • Salt and pepper
  • 2 gherkins, chopped

You will also need

  • 1 cucumber
  • Fancy mini pastry cups
  • Dill sprigs
  • Walnut halves
  • Red pepper, cut into small diamonds
  • Pimento stuffed olives, sliced
  • Paprika for sprinkling

Method

Prepare the filling by mixing all the ingredients together and season well with salt and pepper. Put aside. Prepare the cucumber by removing strips of the skin. Cut into 1 ½ cm slices and spoon out some of the middle to create a cup. Next, place both the cucumber cups and the fancy pastry cups onto your serving dish and fill with the prepared tuna filling. Decorate the tops with the sliced pimentos, red pepper, walnuts, dill and sprinkled paprika.
