Sweet `n` sour drumsticks with sesame ginger rice

Ingredients

For the chicken
3 tbsp maple syrup
4 tbsp sweet chilli sauce (Tiger tiger)
1 tbsp smoked paprika (Lamb brand)
1 ½ tbsp. apple cider vinegar
1 tbsp minced garlic (Tiger tiger)
1 tbsp soy sauce (Tiger tiger)
2 tbsp tomato ketchup (Hellmanns)
8-10 chicken drumsticks
Salt and pepper
1 tbsp oil
For the rice
1 large avocado, sliced
10 broccoli florets, boiled
1 small cucumber, hulled and cut into chunks
3 spring onions, sliced
2 tbsp toasted sesame seeds
2 tbsp toasted cashew nuts or peanuts
2 tbsp chopped coriander
150g cooked brown rice
For the dressing
2 limes, squeezed and zested
2 tbsp maple syrup
1 tsp sesame oil (Tiger tiger)
1 tsp fresh finely grated ginger
Good pinch chilli flakes
1 tsp minced garlic (Tiger tiger)

Method

Start by making the sweet `n` sour sauce. Mix together all the chicken ingredients in a saucepan and cook together for 5 minutes. Meanwhile, season the chicken with salt and pepper. Drizzle with oil and BBQ or oven roast till cooked completely. When ready, brush all over with the sauce and cook for a further 5 minutes. For the ginger and sesame rice salad, place the dressing ingredients together in a jar and shake together well. Place all the rice ingredients into a large bowl, pour over the dressing and mix to combine.
